Virgin Mary

A non-alcoholic version of the more popular Bloody Mary, the Virgin Mary is a delicious tomato-based cocktail and is ideal as an aperitif. We recommend serving the drink with delicious seed crackers.

Ingredients

• 250g of organic tomato puree
• 2 tablespoons of lemon juice
• 1 tablespoon of brine from the natural organic Peranzana olives that will be served during the aperitif
• ½ tablespoon of organic chilli pepper aroma
• 1 tablespoon grated fresh horseradish
• ½ tablespoon Worcestershire sauce
• 100ml of water
• Celery salt
• Pepper to taste
• 2 fresh celery stalks
• Ice

To make the Virgin Mary, add 50ml water; to make the Bloody Mary, add 50ml vodka.

For the crackers:

• 250g of type 0 flour
• 70g of mixed seeds of your choice
• 40g of EVO oil
• 110g of water
• 10g of salt
• Organic Romanesco broccoli cream as an accompaniment to crackers

Preparation

Place the tomato puree, Peranzana olive brine, chili pepper seasoning, lemon juice, grated horseradish, Worcestershire sauce, and water into the blender jug. Blend until combined.
Take two tall tumblers, wet the rim with a lemon wedge, and invert each glass in the celery salt. Fill them with ice and pour in the freshly blended mixture.
To complete the Virgin Mary, add the remaining water, while for a Bloody Mary, add the vodka. Add a few grinds of pepper to taste and garnish with a celery stick.
We recommend serving the cocktail as an aperitif with Peranzana olives and Romanesco broccoli cream, paired with crunchy seed crackers.

To make the crackers

Combine the flour, seeds, and salt in a bowl, then add the oil and water. Work the mixture with a spoon and then with your hands.
Using a rolling pin, roll out the dough between two sheets of oiled baking paper until thin. Use a pastry cutter or knife to cut out the crackers to your desired size.
Bake at 180° for about 20-25 minutes using the fan oven mode.
