Potato Tortilla with Organic Artichoke Hearts

Ingredients

• 500g of potatoes
• 100g of onion
• 5 eggs
• 1 teaspoon of organic chilli peppers in extra virgin olive oil (optional)
• 150g of whole organic artichoke hearts
• Mixed aromatic herbs (oregano, mint, basil)
• Coratina oil to taste

Preparation

Peel the potatoes and cut them into slices. Thinly slice the onion.
Pour the Coratina oil into a pan, add the potatoes, cover, and cook over low heat for about 5 minutes. Add the onion and continue cooking for about 15 minutes. Drain the potatoes and onion and let them cool.

In a bowl, whisk the eggs, add the herbs, the artichoke hearts cut into wedges, the cooked potatoes and onion, salt, and pepper. Pour everything into a nonstick pan with oil (24 cm diameter).

Cook with a lid on over low heat. After about 10 minutes, using a lid, flip the tortilla and continue cooking for another 10 minutes. If you're not sure how to do it, you can skip the flip and continue cooking in a convection oven at 200°C (400°F) for about 10 minutes (it should be golden brown). If necessary, finish with a few minutes of grilling.
