Tuna Burger With Organic Lemon Flavoured Oil and Kale Pesto

Ingredients

• 4 hamburger buns
• About 8 tablespoons of organic kale pesto without garlic or with garlic
• 2 celery ribs (about 80 g)
• 520g of tuna
• 8 tablespoons of organic lemon flavouring
• Grated zest of 1 lemon
• Juice of 1/2 lemon
• Salt and pepper to taste

Preparation

Cut the tuna into coarse pieces. If you buy it from a fishmonger, make sure it's already frozen.

Using the meat grinder attachment on your stand mixer, using the disc with the largest holes, mince the tuna and celery together. Then season with Organic Lemon Aromatic, lemon juice and zest, salt, and pepper, and mix well. Let it rest in the refrigerator for 5-10 minutes to allow the flavors to infuse.

Meanwhile, prepare the bread by cutting the buns in half and toasting them on a nonstick griddle for a few minutes. Once the two halves are ready, spread the base and top of the buns with kale pesto, with or without garlic, to your liking.

Remove the tuna tartare from the refrigerator and, using a pastry cutter, place the tuna on the base of the buns. Press it down firmly and remove the pastry cutter. Finally, drizzle with lemon juice and a few celery leaves, and cover with the top of the bun.
