Ingredients

• Organic chili pepper aroma
• 3 cloves of garlic
• 4 anchovy fillets
• 2 celery stalks
• 4 tablespoons of organic pitted Peranzana olives in extra virgin olive oil
• 2 550g jars of organic peeled tomatoes
• 500g cod heart fillets
• Salt and pepper to taste
• Parsley or basil

Preparation

Pour the chili pepper seasoning into a pan with the anchovies and unpeeled garlic. Dissolve the anchovies and, meanwhile, chop the celery with a food processor (or by hand) and add it to the pan. Cook over low heat until the celery is well cooked.

Then, pour the previously drained peeled tomatoes into the pan and mash them with a fork. Add the pitted Peranzana olives in extra virgin olive oil, season with salt and pepper, and cook over low heat for another 20 minutes. The sauce should gradually lose its water.

While the sauce is cooking, season the cod fillets with salt and pepper, then place them in the pan and partially cover them with the sauce. Cover and cook for about 20 minutes. Cooking time depends on the weight and size of the fillets: the fish is cooked when it flakes with a fork.

Once cooked, plate and garnish the fillets with parsley or basil to taste.
