Ingredients

Ingredients for pancakes

• 300g of type 0 flour
• ¼ teaspoon ground nutmeg
• 5g of salt
• 1 large egg
• 1 teaspoon of baking soda (6g)
• 2 teaspoons baking powder (6g)
• 200g of organic pumpkin cream
• 15g of melted butter
• 30g grated Parmesan cheese
• 160g of milk
• Organic Coratina EVO Oil


Ingredients for the Parmesan sauce

• 500g of milk
• 100g of parmesan cheese
• 50g of butter
• 40g of flour
• Nutmeg to taste
• Salt to taste

Preparation

To make the pancakes, combine the dry ingredients in a bowl. Add the Parmesan cheese, egg, pumpkin puree, and melted butter. Turn on the electric mixer and beat until well combined (it's okay if there are a few small lumps). If the mixture is too thick, add a little milk.

Heat a nonstick pan, grease it with a few tablespoons of Coratina EVO oil, and pour in a little of the mixture, forming a disc. When bubbles begin to appear on the surface, flip it over and continue cooking.

To make your pancakes tastier, serve them with Parmesan sauce. To make it, melt the butter in a saucepan, add the flour, whisk, and cook until a roux forms (a mixture of melted butter and flour that thickens the batter). Gradually add the warm milk, stirring constantly.

When it begins to thicken, remove from the heat and add the salt, nutmeg, and grated Parmesan cheese. Mix well.
